Father’s Day is around the corner, and if you still need to shop today I have a great gift idea for you. I am also sharing one of our favorite recipes for the best Chicken Fajitas so you can grill up a fabulous Father’s Day meal.

We’ve told you about the HomeRight Electro Light Fire Starter before, and today I want to introduce you to the new ElectroTorch. This simple device lights a firepit, wood burning fire, or charcoal grill in seconds safely and without any chemical lighter fluid.

The Electro Torch is so easy to use, it heats up to 1500 degrees and ignites charcoal or wood within seconds. It has a second setting that you can use to rekindle dying coals or to fan the flames of a fire to keep it going. It also has a setting that shuts itself off as a precaution if it reaches too high of temperature so you can rest assured it is safe to use.

This is such a great gift idea for Father’s Day. If the Dad in your life uses a charcoal grill, has a firepit or even goes camping (with access to power) or has, like my Dad, a wood burning fireplace this is a great gift.

While I love that it makes lighting a fire so easy (and much safer), my favorite part is that it eliminates the need for lighter fluid. Pouring chemicals over charcoal then cooking food has never really appealed to me, doesn’t this seem like a much better way to do it? You can grab an Electro Torch right here for just $50, it will pay for itself in one summer of not buying lighter fluid, right?

Now that the grill is all ready 🙂 Here is a recipe you can cook on it; this is one of our favorite weekend dinners. There is something about the chicken cooked on the grill and the spice combination that makes these fajitas so delicious. We originally shared this recipe way back when HERE, but I have updated it for you today. The best part is that you can mix up the dry seasonings ahead (and not have to use the store packets), store them in a jar and be set for the whole summer.

In honor of Father’s Day, we’ll fire up the grill and make a big batch of fajitas served alongside some ice cold Margaritas (best recipe ever is here). I’m lucky enough to get to spend the holiday with my Dad as well as my husband, the two best fathers I know. I couldn’t ask for anything more!

Prep Time 1 hour

  • 4 breasts of chicken (thin)
  • 1 cup white rice

Green Onion & Cilantro Sauce

  • 1 bunch cilantro
  • 4-5 scallions chopped
  • 2-4 TBSP olive oil
  • 1 lime juiced
  • salt & pepper to taste

Fajita Mix/Paste

  • 1 t salt
  • 1 t paprika
  • 1 t honey
  • 1/2 t onion powder
  • 1/2 t garlic powder
  • 1/2 t cumin ground
  • 1/4 t cayenne pepper
  • 1 tbsp olive oil

  1. Place your rice in your steamer and cook.  (If you do not have a steamer, cook your rice per directions in a pot on your stove)

  2. Light your grill and set the temperature to medium/low heat.

  3. Mix together the chili powder, salt, paprika, honey, onion powder, garlic powder, cayenne pepper, cumin and olive oil.  (can mix seasons ahead and add honey at last minute)

  4. Thoroughly coat each breast with the fajita paste and set aside.

  5. Juice the lime into a small bowl and remove any seeds.

  6. Roughly chop the scallions and cilantro.  Place the herbs and lime juice in a food processor, bullet or blender and mix.  Slowly drizzle in some olive oil and mix until all ingredients are well combined.  It should have the consistency of a thick sauce.

  7. Grill your chicken for 5-7 minutes on side one and flip.  Cook for an additional 5 minutes on side two.  Tip: Your chicken is done when it easily lifts off the grill.  If it is stuck, allow your chicken to cook another minute or two.

  8. Toss white rice with green onion and cilantro sauce OR drizzle over rice on each individual plate.

  9. Serve with cheese, sour cream and guacamole if you wish.
