It’s that time of year–I am always on the look out for easy, fresh, no-cook recipes. Today we thought we would recap a few of our summer favorites just in time for days at the pool and evenings on the patio.
Here are some of our all-time summer favorites below…
The Cilantro Chicken Salad is Terry’s recipe and I make it all the time in the summer {well, actually I make this one all year long}. If you have leftover chicken, this salad is a great cook-once, eat-twice dinner. It’s delicious, fresh and super-easy.
Fajitas Chicken with Cilantro-Green Onion Rice
Who doesn’t love fajitas in the summer? Or, anytime? I swear I could eat mexican food every night and never grow tired of it. These fajitas are restaurant-quality paired with perfect cilantro-rice on the side.
Middle Eastern Vegetable Salad
Ina Garten never fails to disappoint, and her Middle Eastern Vegetable Salad is another quick, easy summer dinner–and it’s healthy to boot.
Greek Turkey Burger with Cucumber, Dill & Red Onion Salad
Turkey burgers are a healthy and easy alternative to beef burgers and perfect for a grilled summer dinner. The cucumber, dill and red onion salad gives this dish a fresh spin on a traditional classic.
The name says it best—crisp lettuce, healthy garbanzo beans, grilled chicken and tangy feta plus the “antipasti” kick of pepperocinis, this salad is a summer favorite. Again, it a great use of leftover grilled chicken, and paired with a cold glass of white wine or sparkling water, it’s the perfect way to end a summer day.
