
I read a blog post this week simply about things that made the writer feel happy and decided we needed to do more of that right now! Like many of you my emotions are still on the roller coaster that started last spring and seems to be never ending.
This week has been one of those weeks and I am trying to catch up, as we’re now in the final few days before our oldest child goes off to college. Mix in a sudden unexpected change for my other two children from 2 day in person school to 100% virtual just two weeks before the start of school and my head is truly spinning. I am sure everyone out there is in the same place and can completely relate.

For ALL those reasons I thought that today, with it being Friday and all, was the perfect time to share my husband’s Raspberry Margarita recipe! If you follow us on Instagram, then you saw him earlier this summer whipping up some of his best drinks live in stories {see that in the “Raspberry Margarita” Highlight in Profile}. I wanted to make sure we shared the margarita recipe here on the blog too, since it really might be just what you need right now!
Here are his detailed instructions below.

Raspberry Margarita Cocktail Recipe
The best, refreshing raspberry margarita perfect for summer or anytime!
Ingredients
- Tequila
- Triple Sec
- Sour Mix (Phantastic Poe's if Available)
- Rose's Lime Juice
- Razzmatazz
- Coarse Salt
- Fresh Limes
- Ice
Instructions

Fill a cocktail shake to the top with Ice.
Prepare glass by running 1 lime slice around top of glass and dipping it in coarse salt.
Pour 6 counts of Tequila in cocktail shaker (adjust for taste and strength). A "count" being approximately one second with your thumb partially covering the opening to slow down the pour. Then pour in 6 counts Sour Mix.
Add 2 counts Rose's Lime and 2 counts Triple Sec to shaker
Add 4 counts Razzmatazz to shaker (can eliminate for a traditional margarita).
Squeeze the juice of at least one full lime into shaker, can do two for more fresh taste.
Shake vigorously!
Pour into prepared glass, garnish with a lime slice and serve.

I have jumped on the entertaining board trend this summer and have been putting together appetizer boards to serve we are outside enjoying our new deck. Most of our entertaining has been very casual and outside in the effort to see be able to friends during these social distance times. I bought this large marble pastry board {available HERE} last winter and it has been great. I also use this large tray {similar available HERE but not for much longer} for larger displays.

In shopping news great sales continue and the Nordstrom Anniversary Sale is almost open to the public (card members can shop already). I placed my order early Thursday morning for just a few things, including a T3 Curling Iron , which was my one “splurge” item but I have wanted one for years. I was able to get super warm winter jackets for both my boys, hallelujah for the end of teenage growth spurts so these should last them years. Other things that are making me happy right now…
We’ve been cooking our way through this cookbook all summer. Garlic fries have been life changing 🙂
While at the beach last week I sped through these two books (which were free on Kindle Unlimited) The Royal We and The Heir Affair. They were the perfect beach reads if you happen to be a ‘royals’ fan. These stories definitely gave me a different and more human view of the Brittish monarchy though you will often have to remind yourself that what you are reading is actually ‘fiction’.

???? When and how much Sour Mix?
Sorry that is showing in the recipe now, right after the Tequila. It is important, about 6 counts (so slightly less than the amount of tequila) but if you want to reduce the alcohol in the drink you can add more. Hope that helps!
