There is nothing like a cool salad for dinner in the summer. We often try to grill enough meat that we have leftovers ready to throw in a salad the next night, which makes dinner super fast and easy. Here are some of our favorite summer recipes.
Asian Chicken Salad is one of my favorite recipes. This recipe is fresh, light and easy. You can eat it alone or in a wrap, but either way it’s a great warm-weather dish, you can find the recipe HERE.
Pesto is one of my most favorite summer dishes, but only the freshly made kind, I have yet to find a store-bought version that compares. It’s healthy, fresh and delicious over pasta, bread {or on spaghetti squash} just spoon some on pasta with some good-quality grated parmesan cheese for a quick summer dinner. It can be frozen (without the oil) and is very easy to make, you can find my recipe HERE.

This Cilantro Chicken Salad is hands-down one of the best summer salads ever, it’s amazingly light and fresh and served along-side a perfectly ripe tomato is truly the epitome of a warm weather treat. The full recipe is HERE.

Love these salad recipes, my husband and I love this sort of salad dinners. We add a loaf of crusty bread and its a complete wonderful dinner. I was running out of salad ideas so thanks. Kim
