With the weather here finally getting warmer I am ready to move away from “comfort food” and on to fresh, warm-weather meals. Spring is the perfect time to start thinking about easy, lighter dinner ideas. I am always on the lookout for some new {easy!} recipes to try, so today I thought I would share some of our past favorites to inspire your spring menus.

Asian Chicken Salad is one of my favorite recipes–ANYTIME–but as the weather gets warmer I am not going to lie, I dream of eating it again poolside…soon, very soon, right? This recipe is fresh, light and easy. You can eat it alone or in a wrap, but either way it’s a great warm-weather dish, you can find the recipe HERE.

I already started a basil plant in a sunny window and can’t wait to get a crop going for this year. Pesto is one of my most favorite things ever, but only the freshly made kind, I have yet to find a store-bought version that compares. It’s healthy, fresh and delicious over pasta, bread {or on spaghetti squash if you want to be healthy} just top it with some good-quality grated parmesan cheese and your life will never be the same, I promise. It is also very easy to make, you can find my recipe HERE.

If you are hosting a summer gathering or just dinner for friends, a Taco Salad buffet/bar is a great way to please everyone. It’s a quick, fix-in-advance, type buffet dinner and it’s perfect for both kids and adults alike. See how Christy serves them HERE.

If you are entertaining with mexican food–not to mention Cinco de Mayo is right around the corner–HERE is a classic but really, really good Margarita recipe to serve alongside tacos or other fiesta-inspired food.
This Cilantro Chicken Salad is hands-down one of the best summer salads ever, it’s amazingly light and fresh and served along-side an in-season tomato is truly the epitome of a warm weather treat. The full recipe is HERE.

I can’t forget dessert! This easy-to-make Blueberry Cobbler tops the list for a quick, seasonal dessert, the recipe is HERE.
Do these ideas put you in the mood for dinner al fresco? Sounds good to me! So, tell….what is your favorite spring recipe?
XO,

I’m starving! All of these are enticing and, like you, I love, love the Asian salad! The margaritas look divine ~ will certainly be trying those. Thanks so much for sharing!
