Summer Salad–Asian Chicken Salad

I shared my favorite summer meals HERE, but this one also needs to be included.  Last year we stayed at the Wyndham Bonnet Creek near Disney World and I became addicted to this salad {they served it in a wrap}, I made it a priority to eat it poolside everyday {sigh…}. As soon as I got home, I started making my own version as often as I could.  The recipe is simple, and is divine served in a tortilla, but for those of us on the gluten-free train you can just eat it plain and it is still perfect.

To make this salad, I marinate some chicken in a sesame dressing {I use Old Cape Cod Sesame, Soy and Ginger–Soy can have gluten, so if you need to be truly 100% gluten-free you may need a different choice} and throw it on the grill. OK, my husband throws it on the grill–full disclosure! He is better at that 🙂

Ingredients:

2 to 3 grilled chicken breasts {marinated as above}

1 package cole slaw mix

1/4 cup almonds {optional: toast them for 10 minutes in a 300 degree oven, they have so much more flavor}

1/4 cup cilantro

1/3 cup red onion diced

{optional: red pepper, carrots chopped if you have them}

Sesame/Ginger dressing to taste

Mix everything together. If you have time, allow it to chill for a bit then add the dressing. Serve as a wrap or just as a salad. It’s delicious!
