Today is May 5th and there’s no easier Sunday dinner idea than tacos (plus, everyone loves tacos, right?). Whether you’re throwing together an impromptu party or just gathering for dinner with the family, a taco bar is the easiest way to give a nod to the holiday.
I usually set out lots of lettuce in addition to hard and soft shell tortillas; that way my salad eaters can create their own.
Our favorite toppings include fresh jalapeños, cheese, corn chips, black beans, chopped green onions, diced tomatoes and salsa, sour cream, and guacamole (homemade, of course). I usually can my own salsa, but it’s easy enough to make a fresh batch from scratch and it tastes so good that it’s well worth the effort.
A mix of Mexican beer is the perfect accompaniment; my favorites are Dos Equis and Tecate but I always stock Corona for friends. Margaritas would be a perfect option, too.
