It’s probably more like a relish or a chutney than an actual sauce, but regardless of the name, it’s absolutely delicious on grilled steak.
Cilantro Sauce Recipe:
- One bunch cilantro, washed, dried and rough-chopped
- Minced red onion (I usually use about 1/4-1/3 cup)
- Olive oil (I’m guesstimating here because I just pour it in until it binds the cilantro and red onion together, but probably about 1/3 c.
- Kosher salt and freshly ground pepper
That’s it! Stir it together and let it sit for a few hours so the flavors can meld. Bring it to room temperature before spooning over steak. I recommend flank steak, skirt steak, or other sliced steaks. I usually mix a marinade of red wine, olive oil, and slivered garlic for the meat when I’m using the cilantro sauce recipe. It’s delicious!
