I should maybe call this “The Best Ever Summer Salad”, at least we think it is.
If you are a fan of Italian ‘antipasti’ flavors, this is a great salad to throw together on a hot summer night. It’s making our dinner menu on a regular basis these days, my husband loves it as much as I do. It’s kind of a knock-off of a salad I love from Lone Star Steakhouse—I think its called “Sonoma”? This version is full of protein and so fresh, and delicious.
Ingredients
{serves 2 to 4 people}
½-1 head of romaine lettuce, washed and chopped into 1” squares.
2-3 grilled chicken breasts (we grill extra once a week so we have some on hand for salads during the summer), we marinate/grill them with italian dressing.
1 cup halved cherry tomatoes
½ cup shredded mozzerella cheese
½ cup feta {or more to taste}
1 cup garbanzo beans
½ cup diced pepperocini peppers {again more to taste}
Mix all that together and top with your favorite Italian salad dressing {Note: the only thing we had when we made this the first time was the Good Seasons “mix in the cruet” dressing—so we used that and it was divine.} You can also use just good old olive oil and balsamic vinegar for a less-processed version.
