So, I say all that to tell you that I have been craving soup this weekend. Because I figure you might be doing the same, I’m sharing my four favorite recipes for soups–and strangely enough, they all involve chicken! Two of them can be made meat-free, if you prefer.
Drumroll, please…
1. Chipotle Pumpkin Barley Soup by Edie at Life in Grace (click on the link for the recipe)
This stuff is the bomb–I make it at least twice a month during the cooler months. My entire family adores it, and they rise up and call me blessed when it’s on the menu. I make it just as Edie tells us to in her recipe, although I do add both the chopped cooked chicken AND a cup or two of frozen hash browns. You can omit the chicken if you want a meat-free version.
And if you’re not familiar with Edie’s blog, you must visit. She has a beautiful home but an even more beautiful spirit.
2. Creamy White Chicken Chili by 11 Magnolia Lane (click on the link for the recipe)
Yep, this is my second favorite. It’s easy and fast, but it tastes like you worked harder than you did. That’s the best kind of recipe, right? Go easy on the red pepper if you’ll be cooking it in the crock pot, since the heat develops over time as you simmer it.
3. Quick and Easy Chicken Noodle Soup from All Recipes (click on the link for the recipe)
This cooks in under 30 minutes, and it’s a great way to use leftover chicken, so I’ll often make it the day after we roast a chicken. My son likes it in a thermos for lunch, and just like the white chicken chili above, it tastes like it took more effort than it does.
4. Spicy Tortilla Soup Mix from Cost Plus World Market
This is my favorite soup mix. All you do is add water, uncooked chicken, and the mix to a stock pot, and about 45 minutes later, you’re ready to eat. I serve it with sour cream, tortilla chips, shredded jalapeño cheese, and chopped fresh jalapeños. It’s delicious, and only $4.99 per bag (but a lot of times World Market runs specials and it’s 50% off). I serve it to company all the time and never let on that it was so ridiculously easy.

We love soup in this house all year round..but of course it always tastes better in the Fall and Winter!…great recipes!
