Chicken Stock for the Soul:

I mentioned on my last post that I was going to share how to make your own chicken stock but I cannot take credit for this recipe. Shannon over at Nourishingdays.com was my inspiration for this post as she taught me how wonderful and easy making your own stock can be.

Making your own chicken stock is an unbelievable experience and it is so easy to do!  I just began making my own stock a couple months ago and kick myself for not doing this earlier.  I personally felt I had to be an older and wiser woman in the kitchen to truly understand the art of stock making, something only my mother or grandmother could understand how to do.  But, no– you do not have to be older, wiser or even a good cook to be able to make your own stock!  It is seriously simple and everyone and anyone should be doing it for the health benefits alone.

Here are just a few reasons to make your own stock:

1) Your house will smell like Thanksgiving dinner. The aroma is wonderful, nostalgic and makes you feel warm and cozy inside.  It just delights your senses and makes working at home a joyful experience.

2) You are recycling all the bits and pieces of chicken and vegetables that you may normally throw away which saves you money and offers many health benefits.  Those bits and pieces of chicken bone, cartilage, and veggies offer a bounty of nutritious minerals that our body’s can easily absorb.  It is full of calcium and aids in digestion.  Lastly, what is more nurturing than a bowl of hot homemade chicken soup when you are sick?

3.  It is too EASY not to make your own stock and it truly makes all your recipes taste better.  Move over store bought stock filled with MSG, you are no longer welcome in my recipes!

My Girl’s Room

I took some pictures in my daughter’s room this weekend and thought I would share them. She is three years old so I still, luckily, have complete control of the decor.

I am enjoying it while I can.

Her room is my favorite in the house (though My Kitchen is a close second). While I haven’t done much decorating in here, I love the simple white and pink color scheme. Having had years of only sons,  I am not going to apologize for making the most of finally getting to decorate with pink!

Her room has the best view of the lake in front of our home, and anything too fancy or fussy in here I think would compromise it. I am sure she doesn’t know yet how lucky she is to wake up and have the water right outside, but hopefully she will enjoy it when she is older.

Here bed was a $30 consignment store find I painted white, and her bedding came from EBAY (the bedspread) or from sweet friends (the pillows).

Its on loan to us from Christy’s daughter who has outgrown it, and it will be returned to Christy when we are done for her future generations. For now, its the perfect “Tea Party” table.

Her dresser is covered with part of her window treatment from her former room with some other special gifts decorating the top.

This mirror is also among my favorite things, her grandmother gave it to her. Its the sweetest little mirror ever, the roses are actually ceramic (not plastic), its adorable.

This elephant picture (below) has been in each of our baby rooms. It was the first thing my husband and I bought for my oldest son’s nursery and the frame has been painted many, many times to match nursery decor. I know the time will come soon when I have to part with it, but not just yet.

Next to her bed hangs this little plate, after I bought it I decided it was too cute to use to eat off and hung it up.

These little china figurines were mine when I was young, though for now for their protection, they are kept well out of her reach.

Her chandelier came from Picadilly Ltd in Warrenton, VA. {A wonderful little store}, and its the same one in this gorgeous nursery we featured last fall.

I have aspirations to replace her closet doors with curtains, and re-do her dresser but for now I love how simple her room is, especially when its clean…

Burlap & Lime Green–My Winter to Spring Front Porch

Are y’all getting tired of my front porch?  I hope not!  I like to post pictures whenever I change it up a bit, because I like to show that with just a few minor tweaks (and not a lot of money), you can completely update your space for the current season.

My goal as I transition from one season to the next is to keep it fun, simple, and inexpensive.  I’m always on the lookout for pillows and cushions for the front porch.  It’s covered, so I don’t have to buy outdoor cushions, but I often do (my favorite Ebay source for outdoor pillows is mentioned HERE).  I also pick up pillows at yard sales and thrift stores and give them a good coating of Scotchguard to minimize dampness and sun fading, but even if they don’t last forever outdoors, the price was right!

I found five lime green chair cushions at Goodwill a few months ago; I think they were $1.99 apiece.  Three of them were squeezed onto my glider and the other two are on my black wicker chairs (hmm, the wicker chairs will need another coat of spray paint come spring).  I think the lime green really pops with the black and white polka dots and paisley.  I also put lime green candles in my chandelier; they’ll get burned sometime over the summer, although I’m not going to be sitting out there anytime soon!

I have a mixture of pinecones and Osage oranges on my table.  The Osage oranges are from my back yard, and yes, you’ve seen them before–I’ve had them in my outdoor decor since Thanksgiving (that post is HERE).  They last forever and smell great.

The burlap is cut from a grain sack that I found at the Nashville flea market back in September.  I bought a metal cabinet for my laundry room {HERE} and asked the guy to throw in the feed sack, figuring that I can always use burlap.  I cut it into strips and tied it around the pillows on the porch, and also fashioned some into a bow to make a simple grapevine wreath for the front door.

The rosemary topiaries on either side of the front door are still left over from my Christmas decor, and hopefully I can keep them alive until it’s warm enough to plant them.  I LOVE great big rosemary bushes in my landscaping!  I thought about tying some burlap around the planters, but I decided that might be overkill.  Just like accessorizing when I get dressed, I need to remind myself that less is more. :)   Oh, and do you like my NRA sticker on the right sidelight window?  I figure that should be even more of a deterrent than the alarm signs that my neighbors put in their yards!

The little corner to the left of my front door is a great place for a vignette, although often there are footballs, pieces of sidewalk chalk, and bike helmets stashed there.  Right now, I’ve got my watering can and a couple of grapevine wreaths in there.  The grapevine wreaths were hanging on either side of my mailbox at Thanksgiving–see, I told you that I just keep moving the same pieces around.

My total cost for the front porch was under $15, for the five cushions and the four candles.  And, of course, Easter’s only 40 days away, so it won’t be long before I show you what I do out here for the holiday.  I promise that the Osage oranges will be gone by then!

Chicken Wire Display Frames–Farm Chic Decor!

I love chicken wire…it just kind of fits with my whole flea market/thrift store vibe that I have going on in my house.  I’ve seen all kinds of darling uses for it lately, too:

I’ve also seen so many cute display frames that other bloggers have made to show off photos, hair bows, holiday decor, and the like.  I figured it would be easy enough to try my hand at making one, using a frame that I bought at the thrift store.  I popped out the picture–which was actually a kind of cute and retro kids’ picture, so I mailed it to Amy in case she can use it in her little girl’s room–and kept the white, distressed frame exactly the way it was.

By the way, I bought my roll of chicken wire at Home Depot.  It was in the same aisle as the chain link fencing.  The smallest roll was about $8 and I only used a teensy bit, but I figure I’ll make something else with it one day.  Or, I’ll build a chicken coop!

I didn’t buy tin snips (aka aviation shears) because I decided to use my pruning shears instead.  They’re almost on their last legs, anyway.  I simply cut out the chicken wire to fit the back side of my frame, using the shears, and then used my staple gun to secure it in place.  Watch out for that chicken wire–it’ll scratch the heck out of you!

My picture frame came with the little screw-in hooks and a wire on the back for hanging, already, otherwise that’s exactly what I would’ve added to hang this one the wall.

I used tiny clothespins (I bought them at Hobby Lobby) to hang pictures, business cards, etc on my new frame.  Much cuter than a bulletin board, I think!

Now, here’s a cute alternative from my super-crafty friend, Megan.  She let me photograph her new (old) home in 2010 when she hosted a Christmas open house.  You can check out her awesome style HERE.

Meg found a great old window shutter at the Cameron antique fair in Cameron, NC, and decided to give it new life as a photo display in her daughter’s room.  Here’s what she started out with:

And after a coat of spray paint, some pom pom trim, and a couple rows of wire, here’s what she wound up with:

How’s that for fun?  And instead of using chicken wire, like I did, she used the screw in hooks and a couple of rows of wire, strung horizontally, to create a totally different look (see below).  How cute and creative!

You really could use almost any trim you wanted to jazz this up…

Welcome to week #2 of In the Kitchen at 11 Magnolia Lane. I know that in real time we are more than two weeks into the series, but cyber time seems to move at a different pace. We have so many interests here at 11 Magnolia Lane: home make-overs, DIY projects, fashion, photography, women’s health and, of course, cooking – my personal favorite. We feel that each post deserves its far share of time in the spotlight which is why the meal plans may seem to be taking a while to post but I promise that by the end of this series, you will have a complete set of seasonal menus, over 100 printable recipes and take-along shopping lists to get you through the entire YEAR of meal planning!! Please stick with me as I navigate through this new process and I promise you will not be disappointed:)

I need to kick off this post with some updates:

  1. I have made a few adjustments to the Winter Monthly Calendar, Week 2.  I am cooking and prepping a week ahead of you all to ensure that I have all the correct information and the meals come out as expected.  I hit a speed bump last week and felt the menu needed to be tweaked.  You can re-print the calendar above as well as the Revised Shopping List, Week #2.
  2. Week #3 and Week #4 are going to be released very soon. Please stay tuned as I hope to post the complete winter calendar by late next week.
  3. Lastly, I am very excited to announce that Kara Pfau, dear friend to 11 Magnolia Lane, is going to share her wisdom about women’s health, vitamins/supplements,  and together we are going to challenge each of you to take part in a “Spring Cleanse”. We are so excited to have Kara as a guest writer and I know you are going to find her health and fitness advice both inspirational and informative.

Kids Bathroom Makeover {Part 1}

I am calling this part 1 because I still have some small details to add to my kids’ bathroom, but I am so happy with my progress this far that I am SO ready to show it off.

I didn’t expect to move the kids’ bathroom to the top of my new house “To-Do” list, but an idea suddenly struck and I went with it. My inspiration was this beautiful nursery picture in the Pottery Barn Kids catalog.

Here is the very plain jane “before” picture right after we moved in.

I knew immediately that I wanted to use a gray and white color scheme in the kids’ bathroom. I originally thought I would do polka dots on the walls like in the picture, but as I have 2 boys and a girl I needed a more gender-neutral theme.  So, a gray (BM Cape May Cobblestone) horizontal stripe it was.

After chatting with Christy who assured me I could handle the board & batten treatment (see hers HERE) and reading many of the great online tutorials for it, I jumped in and… well, that was about 3 weeks ago.

OK, so it’s really not an overnight project. Like many tutorials warn, putting the battens up is fairly easy, but painting and caulking (and re-painting and re-caulking) takes a little bit of time.


To accessorize the room, I already had this towel bar and hanging galvanized buckets from IKEA that I had used in my former office. I am crossing my fingers I can obtain a third bucket next time I am at IKEA so each of my 3 children will have their own bucket and then morning routines will go more smoothly. (In my fantasy world, right?)

This super cute basket (below) was a hostess present from Terry recently, and I hope she won’t mind that I sprayed it with metal spray paint to match my decor? :) My mom found these very cool little chalkboards at French Garden House for me for Christmas and I am using them everywhere I can these days.

I also painted (and this was the point where I realized I was getting a little crazy) my formerly white shower curtain hooks so there would be another pop of yellow in the room. It really was super-easy, just a quick spray of Zinzer spray primer, then 2 quick coats of craft paint and now I have yellow shower hooks, perfect.

I made some decorative accessories like this printable sign. {Like it? Click here {Christopher Robin Printable} and download your own copy} and this great “Wash Your Hands” sign, which was a Pinterest find from 4 Men 1 Lady.  I just printed it and mounted it on a plain wood plaque which I had painted gray to match first.

So, what is left to do? Well, I am on the hunt for a yellow and white rug– preferably polka-dotted, and polka-dotted towels (which I can’t find ANYWHERE in yellow, Pottery Barn Kids will you please add yellow in again soon? or Garnet Hill? Please?) and I also plan to update the bottom of the shower curtain with some yellow ribbon (or something) to ground the room with a yellow pop too.

OH, and yes I still need to add molding to the builder-grade mirror, how could I forget that detail?

Sesame Ginger Chicken & Linky Tools Link Party

 

So, you have made it through the first week of low carb and high fat cooking.  I hope you are feeling satisfied and possibly have a bit more energy.  Changing your eating plan is always a difficult process but I do hope I have made that transition a bit easier with the printables recipes, calendar and shopping lists.  The more you plan ahead, the easier it will be to stay on the program and see results.

I have listed on the calendars that Sunday afternoons are my “prep” day and I encourage everyone find a day that works for them.    Setting up a prep day is crucial to your success and it is a huge time saver mid week when life gets busy.   Challenge yourself this week and try to avoid the drive thru or limit the amount of carbohydrates you allow yourself this week.  My friend who has been following this meal plan since January, has lost 17lbs.  This past week she began working out so the 17lbs was from diet alone. Sesame Ginger Slow-Cooker Chicken

(Adapted from the Pilsbury Website)

Ingredients:

  • 6 boneless, skinless chicken breasts, cut into large cubes or strips
  • 1 small bag baby carrots, Broccoli and sugar snap peas (Or any Asian Vegetable mix you prefer)
  • 2 Tbsp grated fresh ginger root,  I used powder but fresh is always better
  • 1/2 cup chicken broth (homemade is always preferable)
  • 1/4 cup honey (I know this isn’t low in carbs but it does make a difference in this recipe so I have no alternative to share)
  • 2 tsp sesame oil
  • 1 tsp dried minced garlic
  • 1/4 cup soy sauce
  • 3 Tbsp cold water
  • 3 Tbsp corn starch
  • 1 Tbsp sesame seed, toasted
  • 2 green onions, sliced with tops

Preparation:

  1. Spray 3 1/2- to 4-quart slow cooker with cooking spray.
  2. Place chicken in slow cooker. Sprinkle with ginger root.
  3. In small bowl, stir broth, honey, oil and dried minced garlic. Pour over Chicken.
  4. Cover; cook on Low heat setting 6 to 8 hours.**Your chicken can become dry if you over cook.  that actually did happen to me the first time around so I had to lower the time as my crock pot does run hot.**
  5. Place the veggies (Carrots, Broccoli and sugar snap peas) in the microwave until Al Dente (I would do this when the chicken is almost done cooking and please don’t overcook your veggies or they will get mushy).  Place on a serving large platter.
  6. With slotted spoon, remove chicken to the same serving platter, cover to keep chicken and veggies warm.
  7. Strain cooking liquid; pour into 1-quart saucepan. In small bowl, mix soy sauce, water and cornstarch until smooth; add to liquid in saucepan. Cook and stir over high heat until thickened and sauce begins to bubble.
  8. To serve, pour sauce over chicken and veggies and toss so they are all evenly coated. Garnish with sesame seed and onions.

Decorating for the Next Ten Years

First off, I am by no means and expert or even a decorator but recently I find myself more frequently having discussions with friends about ways to update their home (especially their kitchen and bathrooms) and not:

  • hurt their resale value
  • do something they won’t like in a few years
  • not have to spend a fortune on a complete overhaul.

Many people I know purchased a new home (or new to them home) during the real estate boom in the early 2000′s. At that time, I was selling homes for a high-end builder so I was involved in the kitchen decor selections for literally hundreds of homes. What I recall is at that time everyone wanted the same thing–some combination of cherry or maple cabinets with a beautiful wood stain and granite countertops. Stainless appliances were still an upgrade some buyers weren’t willing to pay a premium for but double ovens with a separate cooktop were already an essential.

So, I am guessing many readers are thinking, “Yep, that is my kitchen!”.

This is my kitchen, we built the house in 2004. As you can see, we didn’t have the budget for stainless or granite, or even double ovens then.

If we hadn’t moved last year, no doubt I would have done a revamp on this kitchen, probably on a smaller scale then Christy’s amazing kitchen re-do but an update none-the-less.

The obvious way to update your kitchen nowadays is painting the cabinets and add new countertops. If by some chance you haven’t seen the update Christy did to her kitchen here is Part 1 and here is Part 2. It was a huge project for her with a big pay-off, she went from a nice kitchen to an AMAZING kitchen, and made it truly hers.

After designing a new kitchen this year and staring at hundreds of kitchens online, I can safely say the trend is white cabinets with granite counters, a combination I love. Like this kitchen in Christy’s former home that inspired much of my current kitchen decor picks.

But, a friend asked me last week, “will that be the next “dated” look? And, if it is what will be next?” And, that is what I have been pondering.

As I mentioned in my kitchen post I knew I wanted white cabinets in my new home. I really love clean, light “white” but not everyone does, I know that. However painted/colored cabinets are really growing on me, especially light gray like these.

What about black cabinets? {I foresee something similar in Terry’s future kitchen re-do, No?} Leave it to Tori Spelling, I thought the cabinets in one of her homes, which they had painted black, were just fabulous.

I also like the look of “mixed” finishes quite a bit, and expect this trend will continue to grow in popularity. And what it means is that you can re-do only one of your main kitchen elements like the island and not the entire kitchen, which is a great time and money saver.

This picture (above via Decorpad) exemplifies so many current trends. The contrasting dark island brings in furniture details and of course there is exposed shelving but how about that gorgeous glassed-in cabinet? I. Love. it.

Another trend that is also a reasonably easy update is to bring furniture elements into your kitchen. Kitchens with character often look like the elements were acquired over time, and not only do furniture-style cabinets add interest but they also obviously add great storage. Now if I could just find one like this for my home…

Granite cabinets still remain the gold standard, but as with anything that becomes wildly popular it’s possible they will become the hallmark of this decorating era. We went with the carrara marble in our home as I have mentioned, but I also love seeing stainless steel and butcher block/wood counters which can be less costly alternatives.

How many great ideas does this picture encompass? The wood countertop, the furniture island and that fabulous paneled ceiling?

Aside from the beauty shots I used above to exemplified what I see as trends, what I really want to talk about are real, everyday updates to standard builder kitchens.  If you have spent anytime in “blogland” you are familiar with some of them, but they all show such creative ways the average person can make their home truly theirs. And that is really what its about at the end of the day, right?

This is such a creative remake of a builder kitchen, with beadboard, removing the upper cabinets to make open shelving, and adding a banquette. I love that most of it they did themselves and were fearless with their choices.

At the Picket Fence Kitchen Re-do

And how about At the Picket Fence? They even gave us a nice compilation pic that shows the before. I love her kitchen island re-do, it has SO much more character and interest now and she did it herself!

If all else fails, this re-do shows a great simple way to add character. Creatively Living took off her cabinet doors, painted chalkboard paint on the backs of her cabinets and added some beautiful styling. What a fresh change.

I saw this kitchen makeover recently at My Uncommon Slice of Suburbia and couldn’t pin it to my Kitchen Inspiration Board at Pinterest fast enough.

I plan in the future to copy her vent hood cover, and I love how she went at her standard builder kitchen and made it look like a professional designer, contractor and a whole crew of tradesman were involved. I am pretty sure if she and Christy got together, there wouldn’t be much “ugly” decor left in the world anywhere!

These are just a few ideas and inspirations. We plan to continue this series with a few more posts. Christy will be talking about ways to add value to your home, as a military wife who moves constantly she knows her stuff. I will be back with a final post on getting over that fear of “messing up” your home, something I think we all deal with.

Reinventing your left overs: Tilapia Taco Salad with Cilantro Sour Cream

Quick and Easy Tilapia Taco Salad

I hope everyone enjoyed the tilapia with green bean, mushrooms and tomato in a sherry cream sauce last night.  I know I did.   I am a bit embarrassed to admit that I ate all the green beans last night leaving behind two naked tilapia filets and nothing planned for dinner.  This is the perfect opportunity to re-invent my left overs and make an entirely new meal from the leftover tilapia.

As you can see from the current meal February Menu Calendar, we eat lots of leftovers for lunches and nothing goes to waste in my house.  I really try to ensure that we eat everything and if that isn’t possible I usually share it with a neighbor or friend who hates cooking or works long hours.

Re-inventing your leftovers is a great way to save money and it is a huge time saver on those nights where you have a million activities planned or you just do not feel like cooking.  This meal will only take you a few minutes to prepare as the fish is already cooked and can be eaten hot or cold.  This is my version of how you can re-invent your leftovers into an entirely different meal.  Enjoy!

Tilapia Taco Salad

Ingredients:

  • 2 tilapia filets (reheated or cold)
  • 1 head of romaine lettuce
  • 1 tomato
  • 1 bunch cilantro
  • ¼ green onion
  • 1 avocado
  • 1 lime (zested and juiced)
  • 1 clove of garlic
  • 1 container whole milk sour cream
  • ¼ teaspoon of cumin
  • salt & pepper to taste

Directions:

  1. Coarsely chop or simply crumble up the tilapia filets into a bowl, set aside
  2. Dice or slice tomato, avocado and green onion into individual bowls and, set aside
  3. Cut off base of lettuce, wash the leaves and set aside  If you prefer a salad, I would chop the lettuce up into bite-size pieces.  Also, feel free to get creative with your toppings.  These are just my favorites.

Cilantro Sour Cream

Cilantro Sour Cream: (can be combined in a food processor)

  1. Mince 1 clove of garlic
  2. Finely chop ½ cup of cilantro leaves
  3. Zest and Juice lime
  4. Place all ingredients in a bowl with the sour cream
  5. Add cumin, salt & pepper to taste

Assembly:

  1. Place two lettuce leaves on plate; add some fish, diced tomato and 1-2 slice(s) of avocado.
  2. Spoon the cilantro sour cream over the taco
  3. Garnish with green onion and additional cilantro leaves.
  4. Enjoy!

Tilapia with Green Beans, Mushrooms and Tomato

Tilapia with Sherried Grean Beans, Mushrooms and Tomatoes

Ingredients

  • 4 Tilapia filets
  • 1 1/4 pounds green beans, trimmed and cut in half
  • Coarse salt and pepper
  • 1/4 teaspoon of garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoon butter
  • 1 onion, finely chopped
  • 1/2 container of mushrooms sliced
  • 10-12 grape tomatoes sliced in half
  • 1/2 cup dry sherry
  • 1/4 cup heavy cream or half and half

Directions

  1. Preheat the oven to 375 degrees F (190 degrees F). Grease a 9×13 inch baking dish.
  2. Place the tilapia fillets in the bottom of the baking dish and dot with butter. Season with salt, pepper and garlic powder.
  3. Bake for 10-15 minutes until you see the edges of the fish begin to slightly brown and crisp.
  4. Bring a pot of water to a boil and simmer green beans in salted water for 5 minutes.  Drain green beans.
  5. Heat a non-stick skillet to moderate heat.
  6. Add oil and butter to the pan. Add onions and saute 2 to 3 minutes. Add mushrooms and season with salt and pepper.  Add tomatoes and saute 3 to 5 minutes, add beans back to the pan heat through.
  7. Heat green beans through and add sherry then add the cream. Cook for 2-4 minutes. Transfer green beans, mushrooms and tomato cream to a serving plate.
  8. Remove tilapia from oven and place over top the green bean cream sauce.
