I try to always keep a few staples on hand for appetizers. My current favorites are a wedge of espresso cheese, fig spread, grapes, and crackers, all easy to pick up in the deli section of my grocery store.
I also keep frozen puff pastry in my freezer because it’s so versatile–I use it to make everything from chicken pot pie to these delicious pear tarts:

If you don’t have a great soup pot yet, this is the time of year to buy one! I have several enameled cast iron pots of varying sizes that are perfect for making soup. This Staub one is like mine–white with a brass knob–and it’s on sale.
We have apple trees in our back yard this year, so I might try my hand at making apple sauce. If I do, I’ll let you know how it goes!
