Summer Dinner: Steak Salad Recipe

I mentioned this recipe a few days ago; I served it to Amy when she came to stay overnight on our way to the Haven Conference.  It was yummy, and easy, and gluten-free, so I wanted to share.

My husband thinks it’s important that I tell you that this is a waste of a perfectly good steak, which ideally should be served alongside a baked potato and fresh corn on the cob.  He recommends only using this recipe for leftover steak, which apparently is a rarity in his world much like leftover wine is a rarity in mine.

Summer grilled steak salad recipe | 11 Magnolia Lane

It’s still a great summer salad, and hearty enough to stand alone as a meal.

Ingredients:

• Green leaf or romaine lettuce

• Cherry or grape tomatoes

• Carmelized onions (to carmelize onions, slice 1-2 medium-sized onions thinly and cook them in 1-2T. of olive oil over low heat for about 20-30 minutes.  The goal is to soften and brown them but not burn them)

• Roasted asparagus (toss in olive oil, spread on a jelly roll pan, and roast in the oven for 20 minutes at 400°; you can also use leftover or steamed)

• Crumbled blue cheese or Stilton (Amy tells me this isn’t strictly gluten-free, so you might want want to substitute with another cheese that is)

• Croutons (obviously optional if you’re going gluten-free)

• Sliced grilled flank steak

Serve with homemade ranch dressing

That’s it–it’s delicious and easy to use leftovers to make the perfect fresh summer salad.

    How do you season your steak? Do you grill it?

    • Yes, we grill it. For this particular recipe, I marinate it in red wine and olive oil (about equal portions) with some sliced fresh garlic. I also have two delicious flank steak recipes here and here.
