A couple weeks ago, Amy shared her yummy pesto recipe with you all (if you missed it you can check it out here) She made another batch to freeze this past weekend and graciously shared some with me. I was so excited to get the pesto because my husband recently confessed (after 15 years of marriage) that it is one of his favorites! I have been dining out with him and cooking for him for years, and never once has he ordered or asked for pesto. Needless to say, I am making up for lost time and putting Amy’s yummy pesto on everything. Here is a delicious chicken salad recipe perfect on bread, crackers or a bed of greens.
INGREDIENTS
- 2 cooked chicken breasts (baked or boiled)
- 1/2 cup good mayonnaise
- 2 tablespoons of Amy’s Pesto
- Salt & pepper to taste
DIRECTIONS
- Dice or shred your cooked chicken breast
- Combine the chicken, mayo and pesto
- Season with salt & pepper
- Serve on bread, with crackers or on a bed of greens

I love pesto, too. Never thought to use it in chicken salad. My latest creation was making a grilled cheese sandwich using layers of pesto, fresh mozzarella, and tomato. Delish!
