We are back with our monthly budget dinner recipes series hosted by Marty at A Stroll Thru Life and today I am sharing one of our family favorites with you. I have been making this for years, I originally found it on Pinterest but you can find the recipe I sourced from HERE.
While this recipe does have a few steps, none of them are complicated. It makes a generous amount and the ingredients are very straight forward, many of them you probably have on hand most of the time anyway. I serve it over pasta (either angel hair or spaghetti) but you can just as easily eat it on its own if you are cutting carbs out.
Here are the ingredients you need ( I adjusted my recipe slightly).
2-3 tablespoons butter
1 to packages of chicken tenderloins
1/2 onion, diced
2 bell peppers, sliced in thin pieces
2 garlic cloves, crushed and chopped
1 can diced tomatoes
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup half and half (you can use heavy cream for the whole thing but this saves a few calories)
Pinch of nutmeg
Salt & pepper, to taste
1 cup grated mozzarella cheese
Cook the chicken tenderloins in butter until brown and cooked through. Remove from pan and set aside in a buttered 9×12 baking dish.
Add onions and peppers to pan with a little more butter and cook until soft. Remove to baking dish and arrange over chicken.
Saute garlic in some butter then add the tomatoes, chicken broth, heavy cream, half and half and stir well until thickened. Season with salt and pepper and a small amount of nutmeg. Pour over the chicken and top with mozzarella cheese. Bake for 20 minutes covered with foil, then remove foil for the last 5 minutes to brown the cheese.
Serve over cooked pasta if desired.
