Strawberry Mojito Cocktail Recipe

This strawberry mojito cocktail is made with strawberries, lime, mint, simple syrup, rum (white and coconut), and a splash of club soda. Such an easy and refreshing recipe--perfect for your next cocktail hour!

Ingredients

  • 3-4 strawberries, washed, hulls removed, and sliced in half
  • 1 lime, halved
  • 1.5 ounces white rum (like Bacardi)
  • 1.5 ounces coconut rum (like Malibu)
  • 5-6 mint leaves, washed and patted dry
  • 1.5 ounces simple syrup
  • club soda

Instructions

  1. Put strawberries and mint leaves in metal half of a cocktail shaker and muddle.

  2. Squeeze lime halves on top of strawberries and mint and add to shaker.

  3. In glass half of shaker, measure out rum and simple syrup. You can use any proportion of white rum to coconut rum that you prefer.

    To make simple syrup, bring 1 c of water and 1 c of sugar just to boil in a small saucepan. Remove from heat and allow to cool. Store in refrigerator.

  4. Pour rum and simple syrup mixture into metal half of shaker and add crushed ice. Shake for 10-15 seconds.

  5. Pour mixture into two glasses; add more ice and top off with club soda. Mix and serve.
