We’ve just hit the time of year when things get BUSY–busy, but fun. Our calendars are starting to fill up rapidly with all kinds of social activities, and my to-do list grows daily.
We also have lots of opportunities for hospitality around our house. Usually we know our guests are coming, but sometimes they just drop in or happen to still be around at dinnertime.
I like to keep a few “easy” meals in my freezer for nights when we’re busy (or exhausted), so I was happy to give P.F. Chang’s Home Menu a try, although I am VERY PICKY about frozen meals and tend to cook from scratch most days.
Last week, my husband and I had a rare night alone at home. So I headed over to the grocery store and took my time with my selection…they have an impressive variety of appetizers, main dishes, and sides and it was a hard choice. I weighed all my options–beef, chicken, shrimp, vegetables, noodles, and here’s what I came home with:

I popped the egg rolls in the oven and started the chicken on the stove while I got some rice cooking. P.F. Chang’s does sell rice and I certainly would buy it if I really needed a break, but that night I made my own.
It was nice to go from freezer to dinner in under 15 minutes!
I threw a handful of chopped green onions on top for color and crunch, and opened a bottle of chilled chardonnay. We decided to dine in front of the fire–decadence!
We both really enjoyed our meal. My husband was happy that the Signature Spicy Chicken lived up to its name and was spicy (he loves that sauce!) and I was happy at the high quality of the chicken–no fat or gristle to be found. Like I said, I’m really picky about my frozen meals, and I would be completely comfortable serving this to guests. The portions are perfect for 2, and we just ate from the same platter–what a fun way to spend our Wok Wednesday!
