It’s getting to be THAT time of year–and I love it!   Friends drop by spontaneously “just to say hi,” and then stick around for dinner.  Or (and this happens a lot when you live in Savannah), friends and family use you as a pit stop on their way to and fro during their holiday travels.  I’m not complaining, though–we love when we have guests!

I’ve learned over the years just to be ready for visitors at all times.  Don’t fool yourselves, my house isn’t always clean and uncluttered, because we are real people, but hospitality isn’t about having a perfectly clean and decorated house.  It’s about making your guests feel welcome, even when they’re unexpected.  And I won’t lie, that usually involves feeding them!

When it comes to feeding a crowd, there are a few recipes that have stood the test of time in our house.  One of my favorite meals is flank steak, because you can slice it thin and add a few extra sides (or an appetizer) and stretch it to feed unexpected guests.

This recipe, for flank steak with cilantro sauce, is one of my family’s FAVORITES.  Keep the ingredients on hand at all times (they’re pretty simple) and you’ll always be ready to feed a crowd:

I don’t know how it happened, but I’m down to only eight “real” plates, so I always keep a supply of disposables on hand because how else can I feed an army?
