Today we are joining up with our friends for the monthly budget friendly recipe series hosted by Marty at A Stroll Thru Life. I have gotten so many great new dinner ideas from these monthly posts! I am sharing one of my tried and true picnic/pot luck recipes with you today. It is an easy recipe I have had for years and unlike the traditional mayo-laden potato salad, it has a bit more trendy appeal with the combo of crispy bacon and ranch. This is always one of my kids very favorite side dishes.
I serve this with anything we make on the grill, be it chicken, or ribs or even burgers. I almost always have all the ingredients on hand, especially in the summertime. My only caution is that the potatoes tend to shrink up a bit so definitely buy and cut up more than you think you will need. I also think it tastes best freshly made or slightly chilled so I try to not make it too far ahead. Here is the printable recipe:
Easy Bacon Ranch Potato Salad
Perfect for a summer dinner side or your next picnic, this is always a hit!
Ingredients
- 2 Tbsp Olive Oil
- 2 Lbs Red Potatoes Diced Small
- 1/2 Sweet Onion Chopped
- 2 Tsp Minced Garlic
- 1 Tsp Kosher Salt
- 1/2 Tsp Pepper
- 8 Slices Bacon Cooked and Crumbled
- 1 Bunch Green Onions Chopped
- 3/4 C Ranch Salad Dressing
Instructions

Place oil on a large, rimmed baking sheet. Add potatos and the next four ingredients, coating well with the oil.

Bake at 400 for 30 Minutes until potatoes are roasted and crispy.

Transfer to a large bowl, add bacon, green onions and ranch and toss well. Add a bit of salt and pepper for taste. Serve immediately or refrigerate.
